Equipment needed: 2 or 3 small, shallow metal tins or glass containers (approx. 5-6 inches in diameter).
Layer 1: The Chocolate Sponge & Soaking Syrup
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder (good quality)
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup caster sugar
- 1 large egg (room temperature)
- ½ cup milk (room temperature)
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup HOT water
- (For Syrup) ¼ cup hot water mixed with 1 tsp instant coffee and 1 tsp sugar
Layer 2: The Chocolate Ganache/Truffle Layer
- 200 g dark chocolate, chopped
- ½ cup fresh cream
Layer 3: The Chocolate Mousse Layer
- 1 cup chilled heavy whipping cream
- 2 tbsp icing sugar
- 3 tbsp cocoa powder
Layer 4 & 5: The Hard Shell & Dusting
- 150 g good quality dark chocolate (for melting)
- 1 tsp vegetable oil or coconut oil (helps create the “snap”)
- Cocoa powder (for dusting)
Baking Steps
- Prepare the Oven and Tins Preheat your oven to 180°C (350°F). Lightly grease the inside bases of your small baking tins or containers. Do not line them with paper, as the cake stays in the tin.
- Mix the Dry Ingredients Sift together the flour, cocoa powder, baking powder, baking soda, and salt. Whisk in the caster sugar.
- Combine Wet and Dry In a separate bowl, whisk together the egg, milk, oil, and vanilla extract. Add this wet mixture to the dry ingredients and mix until just combined.
- Add Hot Water and Bake Sponge Gently whisk in the ½ cup of hot water until the batter is smooth and very thin. Divide the batter equally among your prepared tins, filling them only about ⅓ full. Bake for 20-25 minutes, or until a skewer comes out clean.
- Soak and Cool Let the cakes cool completely inside the tins. Once cool, poke small holes all over the sponge with a skewer. Brush or spoon the coffee soaking syrup generously over the cake.
- Prepare the Ganache (Layer 2) Heat the ½ cup of cream until simmering. Pour over the 200g of chopped chocolate. Let rest for 2 minutes, then stir until smooth. While still warm, pour this ganache layer evenly over the soaked sponge in the tins. Refrigerate for 20 minutes to set slightly.
- Whip the Mousse (Layer 3) In a chilled bowl, whip the heavy cream and icing sugar to soft peaks. Sift in the 3 tbsp of cocoa powder and fold gently until smooth. Spread this mousse layer evenly over the set ganache. Ensure the surface is very flat. Refrigerate for at least 1 hour until the mousse is firm and very cold.
- Prepare the Hard Shell (Layer 4)Crucial Step: Ensure the mousse layer is completely cold and set. Melt the remaining 150g dark chocolate and the 1 tsp of oil together until smooth.
- Apply the Shell and Dust Working quickly, pour the warm melted chocolate over the cold mousse. Immediately tilt the tin in all directions to create a very thin, even layer that covers the mousse entirely to the edges. Refrigerate for 10-15 minutes until the shell is completely hard and dull.
- Final Dusting (Layer 5) Just before serving, use a small sieve to lightly and generously dust the entire hardened chocolate surface with a layer of cocoa powder.
- Serve Cold This cake must be served chilled. Present it with a sturdy spoon, ready to crack through the top shell into the gooey layers below.
