Ingredients

  • 1 cup plain flour
  • ½ cup cocoa powder
  • 1 cup caster sugar
  • ½ teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • A pinch of salt
  • 100 g unsalted butter
  • 100 g dark chocolate, chopped
  • ½ cup milk
  • ½ cup hot water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 2 tablespoons vegetable oil
  • "For the Chocolate Ganache"
  • 150 g dark chocolate
  • ½ cup double cream

Instructions

  1. Preheat the oven to 170°C. Grease a round cake tin and line the base with baking paper.
  2. Add the butter, chopped chocolate, milk and hot water to a saucepan. Heat gently until the chocolate and butter melt completely. Stir until smooth, then allow the mixture to cool slightly.
  3. In a large bowl, sift together the plain flour, cocoa powder, baking powder, bicarbonate of soda and salt.
  4. Add the caster sugar and brown sugar to the dry ingredients and mix well.
  5. In another bowl, lightly whisk the eggs with vanilla extract and vegetable oil.
  6. Pour the cooled chocolate mixture into the egg mixture and stir until combined.
