Occasions like anniversaries may never pass without celebrations. There should be gathering, fun, food, dance, music, love, and cake. And the latter is the most important element of an anniversary celebration.
Instead of ordering the cake from a bakery, you may try a homemade anniversary cake to woo the invitees and your loving partner.
Now, you may be thinking that baking an anniversary cake at home is a daunting task as you won’t be able to put the decorations and design on the cake as the bakers do. Don’t worry! We bring you a recipe for a simple cake that surely speaks about love.
Today, a chocolate cake topped with cherries is the homemade anniversary cake we are sharing the recipe of.

INGREDIENTS –

  • For Cherry Topping
    15 Cherries with the stem (or without stem, if you like so and number of cherries also depends on your preference)
  • For Cake
    1 cup Unsalted Butter at room temperature.
    200 grams Semi-Sweet Chocolate (in pieces)
    2 Cups of Sugar
    6 Egg yolks
    1 Teaspoon Vanilla
    2 ½ Cups All-Purpose Flour
    1 Teaspoon Baking Powder
  • 1/2 Cup Milk
    1/2 Teaspoon Salt
    Nonstick Spray
  • For Ganache
    110-gram Semi-Sweet Chocolate (chopped)
    400 millilitre Condensed Milk
    ¼ Cup butter

The Baking Process of Homemade Anniversary Cake: –

  1. First of all, the basic thing; preheat the oven to 350 degrees F
  2. Combine butter and sugar well enough in a mixer for three to five minutes
  3. Pour milk in a pot and add semi-sweet chocolate in it. Stir it on the medium heat until the chocolate melts and gets combined with milk well enough.
  4. Take baking soda, salt, and flour and mix them together in a bowl.
  5. Add egg yolks and vanilla to the mixture prepared on step 2. Do it with a mixer on medium speed.
  6. Alternating with the flour, pour half of the chocolate & milk mixture into the butter mixture.
  7. Take cake pans and grease them with nonstick spray.
  8. Pour the cake dough into the two cake pans and bake for around 25 minutes.
  9. When the cake looks baked perfectly, remove the cake pans oven and let it cool completely.

Until the cake is cooling, let’s prepare Ganache:

  1. Melt the chocolate with the condensed milk on a medium heat
  2. Add the butter after the chocolate melts completely and stir the whole until it becomes thick.
  3. It may take a while. Don’t lose your cool!

Now, let’s assemble the cake:

  1. Take out the one layer of cake from the cake pan and pour hot and delicious chocolate ganache on it.
  2. Now place the second layer of cake from the other cake pan on top of the first layer.
  3. Slowly and carefully, pour all the Ganache on the second layer and do remember to cover the sides as well.
  4. Put the cake into the fridge to let the Ganache set on the cake.

As the cake is ready and Ganache is set, let’s move ahead to the topping:

  1. Take out the cherries from the fridge and sprinkle refined white sugar on them.
  2. Make a pyramid of cherries on the centre of the cake.
  3. Put some of the cherries on the sides for the visual appeal.
  4. The decoration depends on your creativity too!
