Cake – a single word which seems quite enough to please some by offering them a bite or two of it. That is why it has been quite correctly exclaimed that “you might not be able to buy happiness, but surely will be able to buy some cake; which more or less seems to be the same.” Among all the people who love or get attracted to cakes, there will be quite a huge portion of the people giving the cake a second thought because of it being baked with eggs and other dairy products.

But all thanks to the advancement made in the cake industry that we have something called a vegan cake for such people. Yes, you heard us! Looking into the snorts passed on to their cakes on birthdays by a lot of vegan guests, bakers thought of coming up with the option of vegan birthday cake. Not just to make birthday parties special, but also for occasions like anniversaries, Valentine’s Day, Mother’s Day, Father’s Day, friendship day and much more, vegan cakes have been introduced as an alternative to the traditional kind of cakes baked with eggs.

Quite just like the traditional pound of cake which has been baked with eggs, cheese, butter or animal fats as well as honey and any other food item originally derived from an animal product, a vegan cake lacks all of such ingredients and can be baked in any flavour.

Often as a substitute for egg, while baking a vegan cake, one can make use of bananas and applesauce as they will add moisture and will work as a binding agent. But as they are not able to trap air bubbles in a cake batter, the end batter will not be that much light and fluffy. To solve this issue, bakers use a pinch or two of baking soda whole, substituting the cake batter with applesauce or bananas. The soda will leaven up the batter and balance out the moisture and lightness.

Another ingredient which needs to be substituted is milk while baking a vegan cake. To be honest there are plenty of substitutes available for dairy milk in the form of soy, almond and rice milk in the market. As per your recipe, availability and choice you can make use of any of these ingredients. Soy milk is low in fat and cholesterol-free which makes it a healthy substitute. Almond milk has a creamy consistency and a nutty taste that compliments the vanilla flavour of the vegan cake. Rice milk is not thick as soy or almond milk which is what makes it a perfect substitute to avoid the cake batter getting thick or tacky.

Is Vegan Cake Healthier Than Normal Cake?

This has to be one of the most asked questions about vegan cakes. A vegan chocolate cake or vanilla cake or vegan cake of any flavour would not contain any animal products. Regardless of this particular change, it will still be processed, making no less healthy than a normal cake- with or without the presence of eggs in it. But if you are kind of diet conscious, then you can absolutely cut back a little on your calorie intake by substituting refined white sugar for a granulated version in the same amount. You can use date’s sugar, maple syrup to balance out the sugar levels and to make the cake – a bit healthy.
