Often as a substitute for egg, while baking a vegan cake, one can make use of bananas and applesauce as they will add moisture and will work as a binding agent. But as they are not able to trap air bubbles in a cake batter, the end batter will not be that much light and fluffy. To be honest there are plenty of substitutes available for dairy milk in the form of soy, almond and rice milk in the market. Almond milk has a creamy consistency and a nutty taste that compliments the vanilla flavour of the vegan cake. Rice milk is not thick as soy or almond milk which is what makes it a perfect substitute to avoid the cake batter getting thick or tacky. 

Is Vegan Cake Healthier Than Normal Cake?

This has to be one of the most asked questions about vegan cakes. A vegan chocolate cake or vanilla cake or vegan cake of any flavour would not contain any animal products. Regardless of this particular change, it will still be processed, making no less healthy than a normal cake- with or without the presence of eggs in it. But if you are kind of diet conscious, then you can absolutely cut back a little on your calorie intake by substituting refined white sugar for a granulated version in the same amount. You can use date’s sugar, maple syrup to balance out the sugar levels and to make the cake – a bit healthy.

COFFEE CAKE BASE

1 cup 

1 cup 

½ cup 

2 tbsp Cacao powder

a pinch of Salt

MOCHA CASHEW FILLING

1½ cups

100g Coconut Butter

1 shot Espresso or Chicory coffee

5 tbsp Coconut Sugar

2 tbsp Cacao powder

1 tsp Vanilla

1 tsp Cinnamon

1 cup (add more if needed)

  • Take all the ingredients under mocha cashew fillings and blend it all together. Blend it until they stick together and the oils from the almonds start to release.
  • Take an 8” baking tin and place coffee cheesecake base into it.
  • Melt the coconut butter.
  • Take all the mocha ingredients into a blender and blend it for 2-3 mins on high speed until it makes a smooth consistency. 
  • Pour the filling on top of the base and freeze it for an hour in the freezer.
