Pound cake is made with a pound of ingredients. Pound cake is usually either baked in a loaf pan or bundt cake pan. Ideally, pound cakes are served with dusted powdered sugar or with a light glaze. Over the years, several varieties of pound cake recipes have come up. Flavouring agents (vanilla extract is used) or dried fruits and nuts (cranberries) are also used. Pound cake recipe also varies from country to country, such as Mexican pound cake called “Panque”, Columbian and Venezuelan Pound Cake, German-style Pound Cake, etc.
We are going to bake a classic Pound Cake

Total Time: 1 hour 35 minutes

Ingredients Used:
2 cups unsalted butter
3 ½ cups sugar
6 large eggs
6 egg yolks (addition to eggs)
1 tablespoon vanilla extract
1 teaspoon salt
3 ½ cups all-purpose flour

Bakeware Required:
Mixing Bowls
Hand-Held or Electric Mixer
Bundt Cake pan or Loaf cake pan

Directions
Preheat the oven to 350 F and grease your cake pan. Use butter and flour to grease the pan.
Put butter in a mixing bowl and beat it using a mixer until it is creamy and smooth.
Scrape the sides, add sugar and beat to get a light, fluffy batter. Keep aside.
In another bowl, add eggs, egg yolks, vanilla and salt. Use a fork to beat the eggs and to combine the ingredients.
Using a mixer, slowly pour the egg mixture into the prepared butter-sugar mixture. Keep beating the mixture until everything is incorporated at low speed. At last, beat at medium to high speed.
Now, in the same manner, add sieved flour to the mixture. Scrape the sides and bottom, stir on medium speed until well combined.
Pour the batter into cake pans. Smooth out the surface of the batter using a spatula.
Bake for an hour and fifteen minutes. Insert a toothpick to test for doneness.
Allow the cake to cool before serving.
You can dust powdered sugar over it, add sliced fresh fruits, or pour liquid chocolate. Garnish as you like.

Note: If you want a burst of extra flavour in your pound cake, you can add lemon juice and zest to the batter and make a lemon pound cake.
