  • 2 1/4 cups cake flour
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cubed
  • 4 large egg whites, room temperature
  • 3/4 cup 2% milk, divided
  • 1 teaspoon clear vanilla extract
  • 1/2 teaspoon almond extract
  • 1/3 cup rainbow jimmies

Butter Cream

  • 6 ounces white baking chocolate, chopped
  • 1/4 cup heavy whipping cream
  • 6 large egg whites
  • 1 1/2 cups sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2 cups unsalted butter, cubed
  • 1 1/2 teaspoons vanilla extract
  • Paste food coloring


  1. Preheat the oven to 350°.
  2. Take 3 cake tins, line the bottom of all with parchment paper, grease the and flour them.
  3. Take a bowl, add flour, sugar, baking powder, and salt, then mix them together.
  4. Then beat the butter until smooth and fluffy. After that, add egg whites, one by one, beat well after each addition.
  5. Then beat in ¼ milk and extract gradually. 
  6. Now transfer the batter into the cake tins—Bake for 25-30 mins.
  7. Then keep them aside to cool.
  8. Now let’s get started with the buttercream.
  9. Melt chocolate with cream until smooth in the microwave and stir after every 30 seconds. After that, set it aside for cooling slightly. 
  10. Whisk egg whites, sugar, cream of tartar, and salt in a stand mixer until blended.
  11. Now take the bowl and place it over simmering water and mix until the thermometer reads 160°, 8-10 minutes.
  12. Now whisk with the mixer until it cools.
  13. Beat in butter, a few tablespoons at a time, then beat in vanilla and white chocolate mixture too.
  14. Now it’s time to assemble the cake.
  15. Take the cake sponge, put buttercream between the layers, and then cover the top and sides too with the buttercream.
  16. Now add food colouring to the remaining buttercream and design the cake as a unicorn. 
  17. For horn, take a cone and cover it with edible gold mist.
  18. Make eyes using piping.
