Ingredients:

For the delicious Crust:

  • 1 and 1/2 cups of graham cracker crumbs
  • 1/4 cup of melted unsalted butter
  • 2 tablespoons of granulated sugar

For the Cheesecake Filling:

  • 24 oz (3 packages) of cream cheese, softened
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of lemon juice
  • 2 tablespoons of cornstarch
  • 1 cup of sour cream
  • 1/2 cup of heavy cream
  • Pinch of salt

For the Topping (Optional):

Fresh fruit compote or your favourite fruit preserves

Instructions:

1. Prepare the delicious Crust:

  • Preheat your oven to 325°F (163°C).
  • In the mixing bowl, combine the graham cracker crumbs with melted butter and sugar. Mix until the crumbs are evenly coated with the butter.
  • Press this mixture into the bottom of a 9-inch (23 cm) springform pan to create an even crust.
  • Bake the crust in the preheated oven for 10 minutes. Remove it from the oven and allow it to cool while you prepare the filling.

2. Make the Cheesecake Filling:

  • In a large mixing bowl, beat the softened cream cheese until it becomes smooth and creamy. You can use a hand mixer or a stand mixer for this.
  • Gradually add the granulated sugar and continue to beat until the sugar is fully incorporated and the mixture is smooth.
  • Add the vanilla extract, lemon juice, and cornstarch to the cream cheese mixture. Mix until these ingredients are well combined.
  • Add the sour cream and heavy cream, continuing to mix until you have a creamy and smooth cheesecake filling. Be sure to scrape down the sides of the bowl to ensure everything is mixed evenly.
  • Finally, add a pinch of salt to enhance the flavour. Mix briefly to incorporate the salt.

3. Assemble and Bake:

  • Pour the prepared cheesecake filling over the cooled graham cracker crust in the springform pan.
  • Tap the pan gently on the counter to remove air bubbles, if any, and ensure a smooth surface.
  • Place the springform pan in a larger roasting pan and fill the roasting pan with around an inch of hot water. This water bath helps prevent the cheesecake from cracking during baking.
  • Carefully transfer the setup to the preheated oven and bake at 325°F (163°C) for about 50-60 minutes or until the edges of the cheesecake are set, but the centre is slightly jiggly.
  • Once baked, turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for almost about an hour to prevent cracking due to sudden temperature changes.

4. Chill and Serve:

Right after the cheesecake has cooled in the oven, remove it from water bath and let it cool at room temperature for another hour.

Once it’s at room temperature, cover the cheesecake with plastic wrap and refrigerate it for at least four hours or, preferably, overnight to allow it to set completely.

5. Add Topping (Optional):

Before serving, you can add your favorite fruit compote or fruit preserves on top of the chilled cheesecake for extra flavour and decoration.

6. Slice and Enjoy:

  • Carefully remove the sides of the springform pan.
  • Slice the eggless cheesecake into even portions, wiping the knife clean between each slice for neat edges.
  • Serve your delicious eggless cheesecake slices on dessert plates, garnishing them with extra fruit topping if desired.

Now, you have a luscious, eggless cheesecake ready to delight your taste buds, and we hope it inspires your baking adventures.
