Chocolate cake

Ingredients

  • 1 kg of chocolate cake mix
  • Four tablespoons of instant chocolate pudding mix (sugar-free)
  • 1-¾ cups of water
  • Three large egg whites (at room temperature)

FROSTING:

  • 1-¼ cups cold fat-free milk
  • ¼ teaspoon of almond extract
  • Three tablespoons of instant chocolate pudding mix  (sugar-free)
  • 1 cup of whipped cream (frozen, thawed, reduced-fat)
  • Chocolate curls

Directions

  • Preheat oven to 350 degrees. In a mixing bowl, mix cake mix, pudding mix, egg whites, and water. Mix at a low speed for a minute, increase the speed to medium and whisk for two minutes. Then transfer to a greased and floured baking pan and bake for about 20 minutes or until the toothpick comes out clean.
  • In a clean mixing bowl, pour milk, and sprinkle a third of the pudding mix; set aside for a minute. And repeat the process the with remaining pudding mix. When done, which the pudding for two minutes and set aside for fifteen minutes. Now evenly spread the pudding on the cake, and decorate with chocolate curls.

Pineapple Pudding Cake

Ingredients

  • ¾ cup of boiling water
  • Four tablespoons of dark chocolate grains.
  • Two tablespoons of butter
  • ¾ cup of sugar
  • ¼ cup of buttermilk
  • One large egg (at room temperature)
  • One teaspoon of vanilla extract
  • ½ teaspoon of orange extract
  • 1 cup of all-purpose flour
  • One teaspoon of baking soda
  • One teaspoon of salt

Glaze

  • ¼ cup of cream
  • Six tablespoons of dark chocolate grains.

Directions

  • Preheat oven to 350 degrees. In a mixing bowl, lightly mix chocolate powder and butter, pour boiling water and mix until the mixture reaches a smooth texture. Allow to cool slightly – then whisk in sugar, buttermilk, extracts, eggs, and other ingredients and mix until it reaches a continuous texture.
  • Pour the mixture into a baking pan and bake for about twenty-five minutes. Allow the cake to slightly cool for ten minutes before transferring to a cooling rack to completely cool.

Glaze

  • For the glaze, boil the cream just in a small saucepan. Mix in chocolate and whisk until smooth. Allow cooling for ten minutes or until it produces a slightly thickened appearance and texture. Gradually pour the glaze over the cake.

Lemon Pound Cake

Ingredients

  • ¼ cup of softened butter
  • ¾ cup of sugar
  • Three large eggs (at room temperature)
  • Two tablespoons of canola oil
  • Two tablespoons of lemon juice
  • Two teaspoons of lemon zest
  • One teaspoon of vanilla extract
  • 1-½ cups of all-purpose flour
  • 2-½ teaspoons of baking powder
  • ¾ teaspoon of salt
  • 1 cup of vanilla Greek yoghurt (fat-free)

Directions

  • Preheat oven to 350 degrees. Grease a 9-inch baking pan with butter, oil, or flower.
  • In a mixing bowl, mix sugar and butter until crumbly. While mixing, add one egg at a time. Add oil, vanilla extract, lemon juice, and zest. 
  • Add flour, baking powder, salt, and greek yoghurt, to another mixing bowl and mix until thoroughly combined.
  • Pour the mixture into the baking pan and bake for about an hour or until a toothpick comes out clean.
